Mexican Quinoa Salad

¾ c. quinoa, cooked according to package directions

1 t. lemon juice

1 t. olive oil

½ avocado, diced

½ red pepper, diced

½ red onion, diced

3 T sweet corn

A handful of chopped coriander

1 t. lime juice

Salt and pepper to taste

You can also add strawberries and mango is you want a little sweetness to it.

Place warm quinoa into a bowl, and mix with lemon juice and olive oil. Arrange avocado, pepper, red onion, corn, and coriander on top of the quinoa. Add lime juice, salt and pepper. (You can also add black beans and/or sautéed vegetables and mushrooms).
